The Story Behind Our Tonkotsu
The key to our broth is the precise combination of pork bones (a mix of femurs, trotters, and back bones) and the exact cooking temperature that creates the perfect emulsion.
We source our pork from local farms that practice ethical raising methods, ensuring the highest quality bones for our broth. The noodles are made fresh daily using a special blend of wheat flour and kansui (alkaline mineral water) that gives them their distinctive yellow color and springy texture.
